One of my goals in 2018 is to try a few new recipes each month, whether they be healthy or indulgent. I used to love baking when I lived in CA, but lost my touch after moving to CO where every baking recipe is affected by the elevation. Slowly I’m getting my groove back and I’ve got a delicious brownie recipe to share with you today 😉 I cut all indulgent recipes in 1/2 because frankly I don’t need 24 brownies in my kitchen, but you can easily double up if you have a larger family, a bake sale, or whatever it may be.
- 1/2 cup melted butter
- 1 tbsp vegetable oil
- 1/2 cup + 1 tbsp brown sugar
- 1/2 cup + 1 tbsp white sugar
- 2 eggs
- 2 tsp vanilla extract
- 1/2 cup all purpose flour
- 1/2 cup unsweetened coco powder
- 1/2 tsp salt
- 3/4 cup chocolate chips of your choosing
First off, preheat your oven to 350. Mix together your butter, vegetable oil, and sugars. Then add eggs, vanilla, salt, and mix until combined. Next up is your flour and cocoa powder, mix until combine but avoid over-mixing. Fold your chocolate chips into the mix or save half for the top, whatever you prefer!

- 8×6 baking pan
- parchment paper
- measuring cups
- measuring spoons
- kitchen aid mixer
You don’t have to have a kitchen aid mixer, but it’s personally my most loved kitchen appliance. I’ve owned one since my early 20’s and always find reasons to use it!
Bake those babies for 35 minutes in a baking pan lined with parchment paper, and prepare to indulge!
